Healthy Blueberry Popsicles Written By: Shantel Whitford Prep Time: 10 minutes Cook Time: 4 to 6 hours freeze time Print Recipe Ingredients 3 cups Blueberries fresh or frozen 1 cup Plain Greek Yogurt 1 Tbsp Lime Juice 2 Tbsp honey 1 tsp Vanilla Extract Instructions Add blueberries, yogurt, lime juice, honey, and vanilla to a blender Pulse and mix ingredients together until the popsicle mixture is smooth. Divide blueberry mixture evenly among popsicle molds; put lids in place, and freeze 4-6 hours (preferably overnight). To remove popsicles from molds, place under running water for a few seconds, then twist popsicle to remove. Making the kids fresh fruit bars like these make them feel like they're eating a dessert, even though they're actually a healthy treat. It's a win-win!
