Hearty Potato Soup Written By: Shantel Whitford Prep Time: 20 minutes Cook Time: 30 minutes Print Recipe Ingredients 6 slices of bacon diced 1 medium onion diced 4 cloves of garlic, peeled and minced ΒΌ cup flour 2 cups reserved water from boiling potatoes 2 cups milk 1.5 lbs potatoes diced. (We love Yukon gold, but russets or reds work also) 2 cups shredded cheddar cheese 1 cup sour cream Instructions Boil potatoes and set aside. Reserve 2 cups of the water from boiling the potatoes. In large pot, brown the bacon, add onions and garlic and saute for 5 min. Then add flour to make the roux. Stir and cook for 1 min. Add back the 2 cups of reserved water, the milk, and the boiled potatoes. Bring to a boil and let thicken. Remove from heat. Add cheese and sour cream and stir until incorporated. Salt and pepper to taste. We love to top ours with some sliced green onion, cheese, and crumbled bacon! During these cold months, the kids really look forward to potato soup. After a day of playing in the snow, they love to come in and warm-up with this hearty and delicious soup! I usually bake fresh dinner rolls to go along with it. It makes for a satisfying and filling meal. For a low carb option, you could substitute cauliflower for the potatoes.
