Low Carb Unstuffed Cabbage Casserole Written By: Shantel Whitford Prep Time: 10 minutes Cook Time: 20 minutes Print Recipe Ingredients 1 large head cabbage, roughly chopped 2 TBS extra-virgin olive oil 1 large onion, chopped 1 cup of diced peppers (bell peppers or mini sweet peppers) 3 cloves garlic, minced (or 2 TBS chopped) 1 lb. ground wild game or your favorite sausage 1 (14.5-oz.) can chopped tomatoes Chopped parsley, for serving Instructions Heat oil in a large pan or skillet over medium heat. Add onion and peppers and cook until soft, about 5 minutes. Stir in garlic and cook until fragrant, 1 minute more. Add ground meat, breaking up meat with a wooden spoon, and cook until no longer pink, about 6 minutes. Add chopped tomatoes, salt, and pepper and gradually stir in cabbage and cook until slightly wilted, 5 minutes. Can add some broth or water if you are needing more liquid that what is in the tomatoes. Garnish with parsley before serving. This is a super healthy family favorite and is a quick dinner to make on a weeknight! We also love to add a little shredded cheddar cheese to the top of ours! You can use any kind of ground meat, from ground deer or elk sausage, even turkey sausage, they all work well in this dinner! This is a great option when meal prepping for lunch for the week! Needing some extra carbs, serve this over your favorite rice to round out the dish!
