Roasted Brussels Sprouts

Ingredients

  • 2 lbs Brussels sprouts
  • 1.5 Tbsp extra virgin olive oil
  • 1-2 garlic cloves minced
  • Salt and pepper to taste

Instructions

Hand trimming the Brussels sprouts is a very important step in this recipe. It is best to trim the excess of the tough stem on the end and remove any yellow or damaged leaves. I would also recommend slicing the Brussels sprouts in half from top to bottom.

In large bowl mix the trimmed and sliced Brussels sprouts with the olive oil, garlic, and salt and pepper until they are evenly coated.

On a large baking sheet (one with small sides) place seasoned Brussels sprouts in a single layer. Place the pan on the top rack in your oven at 400 degrees.

Bake for 20 to 30 minutes, until the Brussels sprouts are crispy on the outside and tender in the middle.

Serves 6


These are sure to be the star of any meal. Brussels sprouts are named after the city of Brussels in Belgium and are a form of cabbage, belonging to the mustard family Brassicaceae. There are many variations you can try with Brussels sprouts! I love to add bacon or parmesan cheese to this recipe. You can also drizzle a nice balsamic vinegar during the last five minutes of roasting to really blend the flavors. Brussels sprouts are an excellent source of vitamin C, K, iron, and fiber. These are just a few of the many valuable nutrients. There are many ways to prepare and enjoy these delicious gems!
